Ingredients:

  • 500g boneless chicken, cut into bite-sized pieces
  • 2 tbsp ghee or butter
  • 1 tbsp oil
  • 1 large onion, finely chopped
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 2 green chillies, chopped
  • 1 cup tomato puree
  • 1 tsp red chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam (hot spices)
  • 1/2 tsp turmeric powder
  • 1/2 cup heavy cream
  • 1 tsp kasuri methi (dried fenugreek leaves)
  • Salt, to taste
  • Cilantro/Coriander leaves, for garnish

  1. Heat the ghee or butter and oil in a pan over medium heat. Add the onions and sauté until they are soft and lightly browned.
  2. Add the ginger paste, garlic paste, and green chillies, and sauté for a minute.
  3. Add the tomato puree, red chilli powder, cumin powder, coriander powder, garam masala, turmeric powder, and salt. Cook the mixture for 5-7 minutes, stirring occasionally, until the oil separates from the masala.
  4. Add the chicken pieces and stir until they are coated with the masala. Cook the chicken for 10-12 minutes, or until it is cooked through.
  5. Add the heavy cream and kasuri methi, and stir well. Cook for 2-3 minutes.
  6. Garnish with coriander leaves and serve hot with naan, rice or roti.
