Ingredients
For the Sheet Pan Veggies and Sausage:
• 2 cups Brussels sprouts, trimmed and halved
• 1 can (15 oz) chickpeas, drained and rinsed
• 1 red bell pepper, chopped
• 1 small onion, diced
• 2–3 chicken sausages, sliced
• 2 tablespoons olive oil
Seasonings/Add ons: (adjust to taste)
• Red pepper flakes (adjust to taste)
• garlic powder powder
• dried rosemary
• dried oregano
• Salt and black pepper, to taste
•½ cup shredded mozzarella cheese
For the Turmeric Brown Rice:
• 1 cup brown rice, rinsed
• 2 cups water
• ½ teaspoon ground turmeric
• ½ teaspoon garlic powder
• Salt and black pepper, to taste
For Serving:
• Hot sauce, to taste

Instructions
1. Prepare the Oven and Ingredients
Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it.
2. Assemble the Sheet Pan
Spread the Brussels sprouts, chickpeas, red pepper, onion, and sliced chicken sausages evenly on the prepared sheet pan.
3. Season and Roast
Drizzle with olive oil and sprinkle with red pepper flakes, garlic powder, rosemary, oregano, salt, and black pepper. Toss everything to coat evenly.
4. Bake
Roast for 30 minutes, tossing the mixture halfway through cooking (at the 15-minute mark).
After tossing, sprinkle the shredded mozzarella cheese over the top before returning to the oven.
5. Prepare the Turmeric Brown Rice
While the vegetables are roasting, combine the rinsed brown rice and water in a medium pot. Add turmeric, garlic powder, salt, and black pepper.
Bring to a boil, then reduce heat to low, cover, and simmer for 40–50 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork before serving.
6. Assemble the Bowls
Spoon a serving of turmeric brown rice into each bowl. Top with a generous portion of the roasted sausage and vegetable mixture.
7. Serve
Drizzle with hot sauce to taste and enjoy warm
